About the Recipe
This Quinoa Veggie Bowl is the perfect healthy meal to meal prep. You can switch it up throughout the week by adding different meat or by making into a soup. I love it with chicken or sausage. I made it a soup a couple days by adding some chicken broth. It is also great topped with avocado!
Ingredients
3 tablespoons avocado oil (or your fav cooking oil)
4 carrots, peeled and chopped
1 yellow onion, chopped
4 celery stalks, thinly sliced
6 cloves of garlic (I use the stuff in the bottle)
1 large zucchini
2 (28 oz) cans of diced tomatoes
2 cups quinoa
4 cups chicken broth
Handful of kale, ribs removed and leaves sliced
1/2 lemon, squeezed
Ground cumin, to taste
Crushed red pepper, to taste
Salt and pepper, to tast
Preparation
1. Add avocado oil into a large pan and heat over medium-high heat
2. Add carrots, onions, celery, and garlic
3. Season with salt and pepper and cook until veggies are soft, stirring occasionally (about 10 minutes)
4. Add Zucchini, diced tomatoes, uncooked quinoa, and chicken broth
5. Season with cumin and crushed red pepper
6. Bring to a boil and then simmer for 20 minutes
7. Add kale and lemon juice and simmer for 5 minutes
8. Optional: add your favorite meat (I used shredded chicken) and your favorite toppings (mine is avocado)
9. Enjoy!
