Chickpea Quinoa Salad

About the Recipe

A heathly veggie salad is great for this warmer weather. This Chickpea Quinoa Salad is a perfect side dish to meal prep. You can make it into a meal by adding a protein, like chicken or shrimp. You can make it into more of a salad by adding in arugula. This side dish can easily turn into a full meal.

Ingredients

  • 1 cup of quinoa

  • 1 english cucumber

  • 1/2 a carton of cherry tomatoes

  • 1 red or white onion

  • 1 can of chickpeas


  • Garlic Powder

  • Onion Powder

  • Dried dill

  • Olive oil, or your oil of choice

  • Balsamic vinegar

  • Optional: jalepeno

Preparation

Step 1


Make the quinoa according to the directions on the package.


Step 2


Dice up the english cucumber, cherry tomatoes, and onion. I use this tool from Amazon to make this step quicker and easier: link. Keep these items in a large mixing bowl for less dishes - no one wants to clean more than necessary!


Step 3


Drain the chickpeas and put them on a baking sheet. Drizzle the chickpeas with olive oil, dried dill, garlic powder, and onion powder. Bake them at 400 degrees for about 20 minutes.


Step 4


Add the quinoa and chickpeas to the mixing bowl with cucumber, tomatoes, and onion. Drizzle some balsamic vinegar and olive oil. Season with garlic powder and onion powder to taste.


Optional:


Add a protein, like shrimp or chicken. You can also add some sliced jalepenos for spice.
