Gluten Free & Dairy Free Healthy Recipes

Healthy recipes are hard to find when you have dietary allergies. I am not a chef (my husband does 90% of the cooking), and I am not a nutritionist. I am a busy mom who was forced to change my diet after developing a gluten allergy in my 20s. I also love to find healthy alternatives that still taste good. So, here is what I love. This Quinoa Veggie Bowl is the perfect healthy meal to meal prep. You can switch it up throughout the week by adding different meat or by making into a soup. I love it with chicken or sausage. I made it a soup a couple days by adding some chicken broth. It is also great topped with avocado!

A heathly veggie salad is great for this warmer weather. This Chickpea Quinoa Salad is a perfect side dish to meal prep. You can make it into a meal by adding a protein, like chicken or shrimp. You can make it into more of a salad by adding in arugula. This side dish can easily turn into a full meal.
